Ready-Made Breakfast Sandwich

Breakfast on the go can be a rush at times; it can also get monotonous and boring! Or maybe you are someone who is so uninspired by the thought of breakfast that you skip it all together. There are a few things you can do to alleviate the morning rush and make your mornings easy and yummy!

One quick breakfast option I have on hand at all times is ready-made breakfast sandwiches. They are easy to put together and store well for up to a week in the fridge and longer in the freezer.

Start by pre-heating your oven to 400°, then spray 12 muffin cups liberally with non-stick spray or olive oil and crack 12 eggs into the muffin cups. Cover a cookie sheet with parchment paper and lay 12 slices of bacon, cut in half, on the sheet. Put the eggs and the bacon into the oven and bake for about 10-12 minutes.  The eggs will be ready at this point but you may need to leave the bacon for another minute or two to get it to how you like it. I usually leave it a little less crisp than I like as it cooks a little further when you reheat your sandwiches later

While your bacon and eggs are baking in the oven, you can prep the rest of your sandwich. You will need 3 slices of black forest ham cut into quarters and 12 slices of cheese. At this point you can separate your English muffins and butter each half.

Getting ready to assemble!

Once your eggs and bacon are ready and you have your ham, cheese and English muffins prepared you are ready to assembly your sandwiches. Add 2 half slices of bacon to 6 English muffin halves, and 2 quarters of ham to 6 English muffin halves. Add a slice of cheese on top of the bacon or ham, and then add an egg. Top with the other half of the English muffin and there you have it! 12 Ready-Made Breakfast Sandwiches, 6 bacon and egg and 6 ham and egg!

Wrap each sandwich individually in parchment paper and place them in a large freezer bag to keep fresh in the fridge or freezer. Four fit nicely. When you are ready to eat, put the wrapped sandwich in the microwave for about 30-45 seconds. You can re-heat directly from the freezer for about 2 minutes in the
